Buffalo Chicken Cobb Salad - Supper for a Steal

With all these heavy buffalo chicken dishes I had to lighten it up a tad with a salad. I even dressed mine with yogurt ranch dressing, but jalapeno ranch (although not light) is way more delicious!

Obviously I’m a huge cobb salad fan. I think this is like the 3rd or 4th variation I have posted. I have said it before and I will say it again, a cobb is my favorite salad. The best way to use up extra veggies, cheeses, or meats. This is a great meal to scale down for just one person. Salads are often my go to lunch because they are easy and quick to make and convenient to create for just one person.

Ingredients
  • 1 head of romaine lettuce, washed and chopped
  • 2 hass avocados, chopped
  • 1-2 tomatoes, chopped
  • 1 cup shredded buffalo chicken
  • 3 oz blue cheese
  • 4 slices bacon, cooked and crumbled
  • Ranch dressing

Instructions
  1. In individual salad bowls prepare each salad. Start with lettuce and line ingredients up on top: diced avocado, tomato, chicken, blue cheese, and bacon. Toss with dressing and enjoy.
