Spicy Shredded Beef ChimichangaCinco de Mayo, American’s excuse to stuff their faces with heavy Mexican food and margaritas. We love a good party, don’t we? This year I decided to lighten it up a bit. I love  good fried burrito as much as the next person, but that should only be an occasional treat.

In over a year of recipe blogging it’s hard to believe I have only posted one chimichanga recipe, it was one of the first recipes I ever posted in March of 2012, the Chicken and Black Bean Chimichanga. As much as I love chimichangas I never make them and since we don’t really go out to eat very often I never order them either.

This time around I’m baking, rather than frying, the chimichangas and making them with whole wheat tortillas.

Spicy Shredded Beef Chimi

Serves: 6+

Ingredients
  • 1.5lb boneless beef roast
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • ½ teasoon paprika
  • 1 teaspoon olive oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 medium jalapeno, sliced
  • 2 chipotle peppers in adobo sauce, minced
  • 1 cup beef stock
  • 2 tablespoons tomato paste
  • large flour tortillas
  • shredded cheese
  • cooking spray
  • additional toppings: Greek yogurt, salsa, chopped tomatoes, cilantro, etc

Instructions
  1. Mix together chili powder, cumin, and paprika in a small bowl. Rub on beef roast, covering all sides. In a large pan heat olive oil to high heat. Sear beef on each side 1-2 minutes.
  2. In crockpot add onions, garlic, jalapeno, chipotle, beef stock and tomato paste. Stir to combine. Place beef in pot and allow to cook 6-8 hours on low. If you can, turn once.
  3. Shred beef and return to sauce for 15-30 minutes to absorb flavors.
  4. Preheat oven to 400 degrees.
  5. Drain meat and put ¼-1/2 cup of beef in the center of each tortilla, depending on how large they are. Top with a little bit of shredded cheese, tuck the ends in and wrap up. Spray tops with cooking spray.
  6. Bake 10 minutes, flip, and bake an additional 10 minutes until they are browned and crispy. Add toppings and enjoy.

Chicken Fried Steak - Supper for a Steal

Chicken Fried Steak was one of our last meals before beginning #MeatlessMarch. I guess we knew we would be eating slightly healthier for the month so we wanted to make sure we weren’t fried food deficient leading into it Smile

But honestly, it is pretty rare that I will make fried food at the house. We don’t like the way it stinks up the entire house so usually we will bake instead of frying, not to mention we actually do care about our health. But I am a southern girl at heart so every now and then I do like to go all out. I picked up some thinly sliced Greenwise steaks and all I could think about was chicken fried steak.

After searching around I found Alton’s recipe which had glowing reviews and I like that it used a little bit of fresh thyme in the gravy. Although this isn’t something that we would eat very often, it was a fun treat before kicking off our month without meat.

Ingredients
  • 2 lbs bottom round, thinly sliced
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1 cup flour
  • 3 eggs, beaten
  • ¼ cup vegetable oil
  • 2 cups chicken broth
  • ½ cup milk
  • ½ teaspoon fresh thyme leaves

Instructions
  1. Preheat oven to 250 degrees.
  2. Place the flour in a wide mouth shallow bowl and the eggs in another wide mouth shallow bowl.
  3. Dredge the meat in flour. Pound it with a tenderizer. Dredge in flour again, followed by egg, then ending with flour.
  4. Place on a wire rack and allow it to sit 10-15 minute before cooking.
  5. In a large heavy bottomed skillet add enough oil to cover the bottom. Turn to medium high heat, once hot add the meat, working in batches if needed. Cook for 4 minutes on each side.
  6. Remove and set on a wire rack on a half sheet pan and place in the oven to keep warm.
  7. Add any remaining vegetable oil to the pan, whisk in 3 tablespoons of flour from the dredging. Add chicken broth and whisk until the gravy begins to boil and thicken. Add milk and thyme and continue whisking for about 5-7 minutes. Season with salt and pepper to taste.

Vegetable and Beef Soup for Souper #SundaySupper

Vegetable Soup - Supper for a Steal

Growing up we referred to this tasty soup as just vegetable soup, but because I didn’t want to confuse you I’m calling it what it really is and that is vegetable and beef soup. This recipe comes from an old, old issue of Southern Living. My grandma has been making it for years, only it no longer resembles the original Southern Living recipe in the slightest. When I asked my mom to email it over to me the only thing still being used from the original recipe is the 1 1/2 pounds of stew meat. Everything else was crossed out with notes in the margin from both my mom and grandma of what they use instead.

But while my family called it Vegetable soup, I liked to call it as eye ball soup. You remember like from the Indian Jones’ movie. We must have been eating this for dinner after it had been on TV one day. I saw the little okra seeds floating around and it reminded me of the eye ball soup in the movie. Ever since then the name has stuck.

Your store probably makes a vegetable soup mix, this is the one I use. It has tomatoes, carrots, potatoes, okra, corn, green beans, lima beans, onions, and celery in it, but if you are unable to find a similar mix you could make up your own fresh or frozen mix for the soup.

Ingredients
  • 1 ½ lbs stew meat
  • 2 quarts beef broth
  • ½ teaspoon pepper
  • 1 large onion, chopped
  • 2 bay leaves
  • ¼ teaspoon oregano
  • ¼ teaspoon thyme
  • 3 bags of frozen soup vegetables
  • 2 cups water
  • Salt to taste
  • Shredded cheese for garnish

Instructions
  1. Combine the meat and beef broth in a large stock pot. Add pepper, onion, bay leaves, oregano, and thyme. Cover and simmer 45 minutes.
  2. Remove meat and cut into small bite size pieces. Return the meat to the pot and add all vegetable and water. Simmer for 30 minutes up to an hour, until vegetables are tender.

Roast Beef Flatbread Sandwich - Supper for a Steal

In the past I have made my own naan because I was sick of paying $3 for 2 pieces at Publix. Homemade naan is great for eating with Indian food or dipping, but I found mine to be a little small for pizzas. Well guess what I found at Costco recently? A 10 pack of naan for around $4. Yep, I did a little happy dance in the aisle. Now I can make my beloved naan flatbread pizzas all the time. While looking over the package I saw they suggest making sandwiches with it. Why didn’t I think of this before. I grabbed a package and headed home to make my first naan panini.

I kept it very simple with just some leftover homemade roast beef, swiss cheese, horseradish mustard, and fresh spinach. Mainly because this was what I had in the fridge and I was desperate to get a naan panini in my belly.

When cooked on the George Foreman (or panini grill) the naan gets a crispy texture on the outside, but still has that lovely chew on the inside. Using naan in place of bread may be my greatest discovery this year and I’m looking forward to experimenting a little more for some incredible sandwiches.

Ingredients
  • 4 slices of naan
  • Leftover roast beef
  • Swiss cheese (either 4 slices or about ½ cup shredded)
  • Handful of spinach
  • Horseradish mustard (or any spicy mustard)

Instructions
  1. Heat panini press or George Foreman grill to medium high heat.
  2. Place a few slices of roast beef on one half of the naan.
  3. Top with cheese and spinach.
  4. Spread other half with mustard and fold over.
  5. Press on the grill for 3-4 minutes until cheese is melted.

Nana’s Marinated Roast Beef | Retro #SundaySupper

Marinated Roast Beef - Supper for a Steal

This #SundaySupper we are featuring old school / retro recipes. I didn’t go very traditional like a tuna noodle casserole, but this recipe is retro to our family. Nana has been making this roast for decades. For Christmas she gave me a few local cookbooks and made sure to point out what page I could find this one on.

Nana mentioned in the book that it is a great dish to bring to tailgates. Since it’s served cold you can just grab it out of the cooler when you get to your location and you are ready to go. It is delicious served on buns or just by itself. We decided to make sliders out of it for dinner.

I had never tried this recipe before this week so I was looking forward to the roast beef that everyone in the family raves about. My husband who isn’t even a huge beef fan liked it. The flavors are so simple, but work so well together.

Marinated Roast Beef -- Supper for a Steal

Ingredients
  • 2 ½ -3 lb Eye Round Roast
  • 1⅓ cup olive oil
  • ½ cup vinegar
  • 2 cloves garlic
  • 2 teaspoons sugar
  • 1 ½ teaspoons salt
  • 1 ½ teaspoons dry mustard
  • Dash of pepper

Instructions
  1. Roast the beef at 325 degrees for 1 – 1 ½ hours or until meat thermometer reads rare.
  2. Allow to cool and slice thin.
  3. Arrange in shallow dish and add oil, vinegar, garlic, sugar, salt, mustard and pepper.
  4. Allow meat to chill 2-3 hours it will continue to get more done as it marinates.
