With Easter last Sunday the Publix ad has been a little off, but starting this week everything will be back on track. There are some great deals to be found in stores. I’m taking the week off from menu planning, shopping lists, and recipe postings. Instead I will leave you with a few easy lunch and dinner ideas that can be made cheaply with what is on sale this week.
Nasoya organic tofu is on sale for $1.49 at Publix. Plus there is a $.75 off coupon and $.55 of coupon found here (use zip code 02468). With the tofu you can make a big pot of Mushroom-Tofu Miso Soup
Fresh Express Salad blends are buy one, get one free and honey mangos can be found for $1. I made a salad last night with greens, chopped mango, and toasted almonds that was delicious. Finish it off with Ruffles and Truffles Honey Lime Dressing.
Boston Butt Roast can be found for $1.99/lb. May I suggest Kalua Pulled Pork or Asian Style Pulled Pork. Use any leftovers to make into another meal of Pork & Avocado Spring Rolls.
Wholly Guacamole is buy one, get one also. I’m thinking some kind of wrap would be delicious. Leftover chicken, black beans, cheese, lettuce, pico de gallo or salsa, and guacamole. Wraps are a go to around here when we need an easy meal.
After going to a new to me farmer’s market this weekend and buying $15 worth of vegetables I tried to keep my Publix trip simple. Lately I have felt the need to simplify our eating. So we are taking a break from all the fancy recipes and just focusing on the nutrition our body needs. Salads, soup, wraps, a roasted chicken, breakfast for dinner. Those are all on the menu for the week. For lunches I like to get creative. I’m sure this week will include plenty of guacamole. My goal for my grocery trip was $30. Check out my total below. Pretty darn close, eh? I’m not to disappointed with that savings either.
With the $15 I spent at the market. I’m coming in at a total of $45 for the week. Not bad for breakfast, lunch, and dinners for the two of us. Sometimes it takes a little bit of creativity, but eating healthy meals on a budget is completely do able. Now I’m off to experiment with new hummus flavors.
