I hope all the mom’s out there had a great Mother’s day yesterday. I spent some time out on the boat with my parents and had a delicious late lunch of buffalo grouper tacos! Because we like to eat, a lot, we ended up fixing the Grilled Cheese Panzanella Salad for a late dinner while we watched TV. I’m telling myself it’s kind of healthy since it has tomatoes and onion, just never mind the grilled cheese croutons.

Things are finally getting back to normal around here. I have my new computer all set up. Photoshop is loaded on it and I’m starting to rewrite a few recipes that I can remember. Losing a hard drive is not fun. I was able to find my pictures back to December on various memory cards, but at the moment I have been able to recover the picture from October and November (when we got the new puppy!) We are running a recovery though so hopefully one of these days I will be able to get back most of my work.
I am really excited about all the meals this week. I would buy a few big containers of lettuce and serve salads along side all of these. Between all the vegetables I have you buying you should easily have some leftover to add to salads.

It’s been a while since I have done a proper meal plan. I didn’t find the Publix ad to thrilling this week, but I have been loving The Fresh Market’s Tuesday specials. This month every Tuesday they are featuring ground beef, antibiotic free chicken breasts and their own label milk from cows not treated with rBGH for only $2.99. In my area this is the cheapest milk around and while I am trying to use more almond milk and less cow’s milk you really can’t beat a cold glass of plain old milk.
Later on today I’m going to be posting a week’s glance at my lunches. When I menu plan I typically plan for dinners and always make sure to have oatmeal, yogurt, and fruits on hand for breakfast. Lunch is all but forgotten, but that doesn’t mean I don’t eat delicious lunches every day. I documented all the lunches I at last week to share with you and I will work on getting that post up this afternoon.

Menu Plan and Shopping List for #MeatlessMarch Week 4

We are in the homestretch, after Easter Sunday we will have completed our #MeatlessMarch! For Easter Sunday brunch we usually gather at my parents house after church where we dine on quiche, fruit, waffles, mimosas and more. I will be bringing my spinach and cheddar quiche, but possibly changing up the cheese and we will also be pre-making a lot of waffles and toasting them up in the oven once we get over there.
I came so close to slipping up this weekend. I was at a party and everyone had brought an appetizer or dessert. I tried out a few new “healthy”dessert recipes, but someone brought something similar to my ham and swiss sliders. If you are having ham for Easter I suggest making a recipe of these with the leftovers. Those sliders are my weakness, they are so delicious. I came so close to putting one on my plate, until I realized, duh this has meat in it and walked away from the sliders. Then I took a step back and thought about how before I probably would have eaten two without even thinking about it.
