Lately I have been in the mood for slightly healthier meals. When I get those kind of cravings, which is rare, I usually turn to salads. They are easy to make and really hard to go wrong with. Plus you can customize easily to family member’s likes and dislikes.
The air is getting cooler and it is time to break out the Fall ingredients. I have been buying mainly Gala apples so far this year. They are some of my favorite for snacking as they aren’t too sweet or sour, but just right. You could use any apple in this recipe, whichever is your favorite. Remember if you plan to prepare the salad ahead of time to squirt a little lemon juice on the apple slices to keep them from browning.
In the next few weeks I am going to be working on a new section here on the blog of 20 minutes meals. I want it to be somewhere you turn when you need to swing by the store to grab something for dinner, but don’t want to put the effort into slaving over the stove when you get home. A lot of the recipes will probably feature rotisserie chicken and that is exactly what I used in this salad.
- 1 apple, cored and sliced thin
- 1 cup rotisserie chicken, off the bone
- ½ cup craisins
- ½ cup pistachios
- Sprinkle of blue cheese (if you have it, sorry I left this off the shopping list!)
- Mixed greens
- Blue cheese vinaigrette
- Divide mixed greens among bowls. Top with sliced apple, chicken, craisins, pistachios and drizzle with your favorite blue cheese vinaigrette.
This is one of my favorite types of salad…not only do I love blue cheese on salads, but chicken paired with apples is always so good!
