In the mood to grill for Cinco de Mayo? I have the perfect burger for you! This Chili Lime Chicken Burger pacts a ton of flavor and is still good for the waist line. But be warned, if you have never worked with ground chicken before it is very sticky. I recommend you become good friends with your non stick cooking spray.
I love a change from the traditional burger and this does not disappoint. They are slightly spicy, but the guacamole helps balance out the spice. Seriously make these now! With ground chicken on sale you really have no reason to say no.
Chili Lime Chicken Burgers
adapted from Iowa Girl Eats
Serves 4
For the burger:
- 1lb ground chicken
- 2 green onions, chopped
- ¼ cup chopped red bell pepper
- 2 tbsp chopped cilantro
- 2 small cloves garlic, minced
- ½ tsp salt
- ¼ tsp red pepper flakes
- Juice from ½ lime
- 4 slices pepper jack cheese
- 4 toasted hamburger buns
For the guacamole
- 1 avocado
- Juice from ½ lime
- Cayenne pepper
- Garlic powder
- Salt
Directions
1. Combine chicken, onion, pepper, cilantro, garlic, salt, red pepper flakes and lime juice in a large bowl. Mix thoroughly and form 4 patties.
2. Heat indoor grill or grill pan over medium-high heat. Grill burgers for 8 minutes or 4 minutes per side. Top with sliced cheese and allow to melt.
3. While the burgers are cooking mash the avocado with lime juice, and a sprinkle of each cayenne, garlic powder, and salt to make an easy guacamole topping.
4. Assemble the burgers on buns and top with guacamole.
