Who is excited for Buffalo Chicken Week!? I know I am. While I am vacationing in Denver, CO I have lined up an entire week plus more of buffalo chicken recipes.
To start with we need to make the buffalo chicken. I would suggest making the chicken in the crockpot on Sunday and then measuring out the chicken needed to each recipe and storing in separate, labeled ziploc bags. For any leftover chicken measure out 1 cup quantities and store in the freezer. I also have another recipe or two for buffalo chicken next week. For a quick idea: we don’t eat many hot dogs so I used some leftover buns and put buffalo chicken and ranch dressing on top, makes for an easy lunch or kid sized dinner.

- 1 pkt ranch dressing mix
- In the crockpot mix together the buffalo sauce and the ranch dressing powder. Add the chicken and toss to combine.

- Either remove chicken to cutting board or in the pot shred with two forks. Return to liquid and allow to rest for 30 minutes to 1 hour on warm in the pot.
