Roasted Baby Carrots with Apple Cider Glaze

Ingredients
  • 16 oz baby carrots
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon olive oil
  • 1 cup apple cider
Instructions
  1. Preheat oven to 350 degrees. In a bowl toss carrots with salt, pepper, and olive oil.
  2. Spread on a baking sheet and roast for 30-40 minutes until tender.
  3. minutes before carrots are finished. Boil apple cider over high heat for 7-10 minutes. Until thickened and reduced.
  4. Toss carrots with apple cider reduction right before serving.
