Roasted Carrots with Apple Cider Glaze – Supper for a Steal

Roasted Carrots with Apple Cider Glaze

Roasted baby carrots are a go to side for me. Toss with olive oil, salt, and pepper and throw in the oven. Sometime I will toss them with fresh herbs and sometimes I like to take the sweeter route. These roasted carrots with apple cider glaze would be great at your Thanksgiving table because they are easy to prepare and sweet like candy.

The apple cider glaze is simply an apple cider reduction. Just be sure to watch while you are reducing it, because it is easy to go from thick reduction to hard, sticky syrup. Not that anyone in this house did that… I blame it on the puppy going potty on the floor every 5 minutes while I was cooking. Thanks a lot. But, back to the carrots. They are great. Give ‘em a try, you won’t be sorry.
