Roasted baby carrots are a go to side for me. Toss with olive oil, salt, and pepper and throw in the oven. Sometime I will toss them with fresh herbs and sometimes I like to take the sweeter route. These roasted carrots with apple cider glaze would be great at your Thanksgiving table because they are easy to prepare and sweet like candy.
The apple cider glaze is simply an apple cider reduction. Just be sure to watch while you are reducing it, because it is easy to go from thick reduction to hard, sticky syrup. Not that anyone in this house did that… I blame it on the puppy going potty on the floor every 5 minutes while I was cooking. Thanks a lot. But, back to the carrots. They are great. - 16 oz baby carrots
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 tablespoon olive oil
- 1 cup apple cider
- Preheat oven to 350 degrees. In a bowl toss carrots with salt, pepper, and olive oil.
- Spread on a baking sheet and roast for 30-40 minutes until tender.
- minutes before carrots are finished. Boil apple cider over high heat for 7-10 minutes. Until thickened and reduced.
- Toss carrots with apple cider reduction right before serving.
